Havana.- Japanese experts highlighted the quality of Cuban lobster by authorizing its commercialization in the international market after they carried out an audit in the largest Antillean Island.

The experts’ inspection included four lobster-processing plants, as well as the Caibarien Provincial Industrial Company, in central Cuba.

In that region, the industrial process has benefited from a rapid-freezing line in which four tons of lobster a day can be frozen at –100 degrees Celsius. The entire process takes 36 minutes.

Thirty-nine boats equipped with state-of-the-art technology that can detect lobster populations, no matter how small they are, are used in the capture.

Cuba has maintained a privileged position in lobster commerce for over 50 years, and its major markets are Japan and Europe.
